Sweet Potato & Zucchini Hash

Ingredients:

  • 2 x Zucchini (medium sized, diced)

  • 450g Sweet Potato (peeled & cut into cubes)

  • 8 x Eggs

  • 1.5 Tbspn Coconut Oil

  • 1 x Brown Onion (diced)

  • 2 x Cloves Garlic (chopped)

  • Parsley (1 x handfull, chopped)

  • Cayenne Pepper (to taste)

  • Salt & Pepper (to taste)
